Rene Taipana: There were a lot of people long ago before there were any white men. It seems like people never got sick that often. And people came together from everywhere. Long ago, some of the people died due to illness, when they got very sick. The sickness in those days wasn't like the complicated illnesses of today. It was said and known that people then rarely got sick.
Sam Oliktoak: But people would die of starvation. My mother's father, when he was still alive, said that a lot of people died one winter. The weather wasn't good. They ran out of food. They starved to death. That's how a lot of people died too. Back then, they had no stores to buy food from. Bad weather. People didn't go out hunting much that winter. They ran out of food and died. That's when my mother's father was living yet.

The detailed description of giviak is provided, where a seal is skinned and then filled with small birds called auks which is left to ferment in the summer sun, providing an Eskimo carnivore delicacy in the winter.
We sat a little while talking about the weather and the dogs. When the conversation died down a little, he expressed the thought that possibly his guests would want a bite to eat to pass the time, since he himself was so incapable of telling interesting hunting experiences or worthwhile stories.
We answered that we hadn't planned at all to eat at this particular time, but since we had been told that this was the house where the really good things were served, we wouldn't say no to anything he might offer.
Angutidluarssuk laughed and said that now he would try to forget his shame if it was possible, for he had never as yet had any luck when he tried to bring forth good-tasting food. On top of that, he protested, his miserable wife was completely lacking in all talents. But since his poor conditions surely were known to all, and he presumed that he was the topic of conversation wherever people wished to have a good laugh, he might as well go out and see if any of some poor birds he had collected were left. He would, he said, serve birds because he was incapable of catching seal or walrus or other such animals as manly hunters brought home.
He disappeared out through the entrance while the rest of us expressed our wonder at his modesty and excellent manners. Then we heard his voice calling from the outside. From the entrance tunnel he handed in one end of a long strap. At once several men jumped to their feet and began to pull on it. Outside, Angutidluarssuk was heard chasing puppy dogs away from the entrance tunnel and directing something heavy in through the narrow passage. Inside, the men hauled with exaggerated efforts.
"We can hardly manage this. It is terrible how this great hunter always owns big and heavy things. Do you suppose we ought to give it up?" etc. At last, a huge frozen seal came in through the opening. It was a giviak, the most festive food a Polar Eskimo can treat you to. Giviak means something immersed, in this case little auks that have been immersed in seal blubber and ripened through the summer into a delicacy to dream about.
Auks are birds that live by the millions in the bird cliffs along the coasts of Smith Sound. In an indirect way, they were the reason for our being there. For they are the favorite food of the foxes that the Eskimos traded to us in return for the goods we had to offer. They are small birds, no larger than starlings, but tasty to eat, either cooked or dried, and particularly so when preserved in blubber. The birds are caught in nets on long poles as they pass in flocks by the cliffs. What a wonderful time when they arrive in spring! Here it could really be said that "the sun is darkened" by birds.
When you want to make a giviak, you must first catch a seal, which then has to be flensed in a special and very difficult way. You start by cutting around the seal's mouth and let the hands feel their way down along its body inside the skin. The knife must not be too long, and it takes some practice before the hands have the right feel to avoid making holes in the skin. Around the forelimbs it can be particularly hard to find certain joints that have to be cut through. As you continue, both your arms are little by little buried in the seal. Often, big slices of blubber must be cut away and taken out through the opening at the mouth, so as to make room to operate in. When at last the knife has been all over, and the skin is entirely freed from the seal's body, there comes the most difficult part: the entire body has to be pulled out through the mouth opening. As a rule, two men have to pull with all their strength to get it done.
You now have a bag formed of the sealskin and lined with blubber. And you are ready to proceed with the next task: the bird catch. A wall of stones is put up to hide behind. The little auks do not nest on the steep cliffs, they make themselves comfortable under the big stones in the scree, and often they crawl into deep holes under these stones. When they then fly out, they amuse themselves by swarming in clouds along the cliff quite low over the ground. Then is the time to let the net dart up and catch it full of birds. The pole has to be turned quickly so as to close the net and prevent the birds from flying out again. The birds are taken out of the net and killed by guiding a thumb up under the breastbone to the heart, which is "displaced," and the bird dies at once. After the wings have been braided together on the back of the bird, it is then put down in the blubber bag. A diligent birdcatcher—the women as a rule—can fill a sealskin in two days. But Angutidluarssuk had filled two sealskins between two sleeps. It must be said, though, that he was famous for sleeping infrequently in good hunting weather.
When the bag is full, it must immediately be put in a secure place and covered with stones. The sun must never shine on it, since the blubber would then turn rancid. The comparative warmth of the summer air makes the blubber seep into the birds and cure their meat. Nothing is quite so delicious, especially the lump of blood collected around the damaged heart, which is almost heavenly to eat.
Now it was winter, and Angutidluarssuk's giviak was frozen. He took his axe and started chopping up the icy stuff Pink feathers and bird meat flew to all sides, while we watched in pious silence. At last the floor was completely covered with pieces of meat and blubber. Angutidluarssuk picked up a bite, tasted it, and threw it contemptuously away.
"Alas, as I told you: this is inedible! Possibly I have, through an oversight, filled the skin with dogs' dung. Possibly it is only my absolute ignorance about how to make a giviak that has caused this mistake! If you would show me a kindness, you would leave me now so that I could be alone with my shame!"
Upon this invitation, we started in. It tasted good the moment I got it in my mouth. But I had to be taught how to eat this remarkable dish. As long as it is frozen, you just chew away. You get feathers and bones in your mouth, of course, but you just spit them out. Frozen meat always has an enticing taste, and as it dissolves in the mouth, you get the full aroma of the raw fermented bird. It is incredible how much you can down, unbelievable how hard it is to stop. If you happen to come across a fully developed egg inside a bird, it tastes like a dream. Or the liver, which is like green cheese. Breast and drumsticks are cooling and refreshing. It was late before we were full, and there was then about half of the giviak left. This was put up on one of the bunks to thaw for later use.
When we had had some sleep, we started the second part of the feast. The giviak was now so much thawed that the little auks tasted entirely different, and it was possible to eat them in a new way. Whole birds could now be pried loose from the compressed mass, and when that is the case, great elegance can be demonstrated while enjoying them. A man with savoir-vivre holds the bird by the legs with his teeth. Then he strokes it with both hands, thus brushing off the feathers that have already been loosened by the fermentation. He brushes his hands together to remove all feathers, whereupon he turns the bird and bites the skin loose around the beak. This can then be turned inside out and pulled free of the bird without letting go of its legs. The eater then sucks the whole skin into his mouth and pulls it out again, pressing his teeth slightly together. In this manner, he gets all the delicious fat sitting inside the skin. Taste is, as we know, an individual matter, but this one—I dare guarantee—can become a passion.
When the skin is free of fat, you bite it free around the bird's legs and swallow it in one piece. The breast is eaten by biting down on each side of the bone, and the bone can then be thrown away. This bares the innards, and you can enjoy the various parts one by one. The blood clot around the heart has coagulated and glues the teeth together, the liver and the gall bladder have a spicy taste, while the bitter aroma of the intestines reminds one of lager beer. When these parts are consumed, the rest—wing, backbone, and pelvis—is taken into the mouth and thoroughly chewed.
Such delicacies were always served in Angutidluarssuk's house. His meat caches were always filled, and whenever I needed a good feed for my dogs, I went to visit him. He was always my friend. In the spring, he came home with as many seals as he could load on his sled. But he didn't sleep as long as the weather was nice and the seals were basking in the sun on the ice. He just unloaded and went out again to get more. Neighbors and friends had only to take what they wanted. Angutidluarssuk himself was silent and modest and smiled shyly when somebody spoke to him.

Kuptana describes the ancient practices of catching hundreds of fish using stone weirs in the summer.
Summer Fishing
William Kuptana. During the summer, the Copper Inuit would pile up stone corrals in the shallow streams to trap the fish. When the fish swam through to the corrals, the Inuit would block the entrance to prevent the fish from escaping. The take from the corral would total a few hundred fish. The various ways they'd prepare the fish is by drying and then smoking to preserve it over the winter months. The remainder of the catch was then buried with stone caches that were built so other predators could not help themselves to the fish.

Jenness describes the hunting and fishing habits of the Northern Copper Inuit and was impressed by their ability to endure long walks without food in the hunt for caribou. The effect of the white men's economic habits start to make the Eskimos dependent upon civilization for survival, while making famines less likely.
Jenness did not make it to Prince Albert Sound But he had satisfied his curiosity that the Prince Albert people were as to language and culture very similar to The Copper Inuit of Dolphin and Union Strait. Toward the end of the summer Jenness and his adopted family made the slow migration back to the southern coast fishing and hunting caribou along the way. At that time of year food shortages were common and the Inuit would go for days without sighting caribou or catching fish. Jenness was impressed by the endurance and patience of his traveling companions the experience [of starvation] was no novelty in their lives they merely tighten their belts trudge steadily forward a dozen or 15 miles and said smiling smiling lately if we sight no Caribou today we will tomorrow or if not tomorrow certainly the day after (Jenness 1928:219).
After his extended research visit to the land of the copper Inuit, Jenness wrote two definitive books about the people with whom he lived and traveled: The Life of the Copper Eskimo(1922) and The People of the Twilight(1928). Stefannson, working to the north, and Jenness, to the South, documented well the traditional culture of the Copper Inuit. The scholarship was completed just in time, for the isolation of the Copper Inuit was soon shattered permanently by the activities of traitors, missionaries, and other representatives of southern culture. As Jenness wrote years later in his epilogue to The People of the Twilight:
Even as we sailed away traders enter.e their country seeking fox-furs; and for those pelts so useless for real clothing they offered rifles, shot-guns, steel tools, and other Goods that promise to make life easier so the Eskimos abandoned their communal seal hunts and scattered and isolated families along the coast in order to trap white foxes during the winter when the fur of that animal reaches its prime. Their dispersal loosened the old communal ties that had held the families together. The men no longer labored for the entire group, but hunted and trapped each one for his family alone... The commercial world of the white man had caught the Eskimos and its mesh destroying their self-sufficiency and independence, and made them economically its slaves. Only in one respect did it benefit them: it lessened the danger of those unpredictable famines which had overtaken them every 10 or 15 years, bringing suffering and death to young and old without distinction (Jenness 1928:240).

Peter Freuchen eats buckets of eggs at a time with other Eskimo hunters, but hopes his stores aren't eaten up by the hungry carnivores.
When we arrived home, I was informed that the strong gale had broken the ice around Dalrymple Rock. Now that it was about to settle again, there was a chance of a good catch of walrus, because these animals could get closer to Saunders Island, where there are mussels and where they like to stay. Consequently, I left Navarana at the settlement and joined the hunters on the ice. It was a healthy life, but somewhat dull in the evenings when we were running around playing to keep ourselves warm. One day, a fresh young man had a bright idea.
"Somebody got the desire for eggs," he shouted. "There are eggs on this island. Let us go get eggs!"
The others seconded his motion, and the whole crowd scurried up to get—my eggs. It so happened that I was the only one who had collected and cached enough of them, and I had sneakily counted on them for myself and my guests. As a man of honor, I could of course do nothing but join the chorus and express my satisfaction that my wretched eggs were allowed to be included in the meal. They came down with bags filled with the stone-hard frozen eggs. Some were gnawed on the spot, like apples, others were put in the pot until it was filled up with eggs. Nobody gave it a thought that these eggs belonged to me. Had I owned the eider ducks? Had I done anything but hide the birds' eggs? Nobody in this country knew how to be content with an egg or two. Here the fun was to see how many could be downed. And every man had ten fingers and ten toes, that was enough to count on. We filled the pot several times.
When I returned home, I could really begin to appreciate my little woman. She had taken wonderful advantage of her visits. What she had paid with, I don't know, but now she had fine kamiks of white sealskin with a beautiful border of bear mane.
I told her of my experience with the eggs. She said immediately that she would take care of that, since I seemed to be so fond of eggs. I told her that she was not to ruin my good name and reputation as a hunter by passing my complaint on to the others. She turned her big black eyes toward me and looked at me as if I had wanted to avert a misfortune or heavy insult to both of us: "Do you really think that I could do that to you?" she said seriously.
She went down to her mother and said that she felt sorry that it would not be possible to treat guests to eggs this year, since the hunters had used them out on the ice and didn't leave any to take home to the women.
The next day, Kasaluk told her husband that she strongly feared that the walrus hunt would be of short duration this year. In her dreams, she said, she had seen that the ice was strewn with eggshells, and in the same vision she understood that this insulted the walrus so that they would decide to go elsewhere. The hunters talked the matter over. They agreed of course that a mere woman's dreams should have no influence. But for the sake of all eventualities it was decided that it was better not to eat any more eggs as long as the walrus hunt lasted. As a result, plenty of eggs were stored up in my quarters.

Neanderthal diet at Vindija and Neanderthal predation: The evidence from stable isotopes
The isotope evidence overwhelmingly points to the Neanderthals behaving as top-level carnivores, obtaining almost all of their dietary protein from animal sources
Archeological analysis of faunal remains and of lithic and bone tools has suggested that hunting of medium to large mammals was a major element of Neanderthal subsistence. Plant foods are almost invisible in the archeological record, and it is impossible to estimate accurately their dietary importance. However, stable isotope (13C and 15N) analysis of mammal bone collagen provides a direct measure of diet and has been applied to two Neanderthals and various faunal species from Vindija Cave, Croatia. The isotope evidence overwhelmingly points to the Neanderthals behaving as top-level carnivores, obtaining almost all of their dietary protein from animal sources. Earlier Neanderthals in France and Belgium have yielded similar results, and a pattern of European Neander- thal adaptation as carnivores is emerging. These data reinforce current taphonomic assessments of associated faunal elements and make it unlikely that the Neanderthals were acquiring animal protein principally through scavenging. Instead, these findings portray them as effective predators.
Stable Isotope Analyses.
Mammal bone collagen δ13C and δ15N values reflect the δ13C and δ15N values of dietary protein (14). They furnish a long-term record of diet, giving the average δ13C and δ15N values of all of the protein consumed over the last years of the measured individual's life. δ13C values can be used to discriminate between terrestrial and marine dietary protein in humans and other mammals (15, 16). In addition, because of the canopy effect, species that live in forest environments can have δ13C values that are more negative than species that live in open environments (17). δ15N values are, on average, 2–4‰ higher than the average δ15N value of the protein consumed (18). Therefore, δ15N values can be used to determine the trophic level of the protein consumed. By measuring the δ13C and δ15N values of various fauna in a paleo-ecosystem, it is possible to reconstruct the trophic level relationships within that ecosystem. Therefore, by comparing the δ13C and δ15N values of omnivores such as hominids with the values of herbivores and carnivores from the same ecosystem, it is possible to determine whether those omnivores were obtaining dietary protein from plant or animal sources.

FOCUS: Gough’s Cave and Sun Hole Cave Human Stable Isotope Values Indicate a High Animal Protein Diet in the British Upper Palaeolithic
We were testing the hypothesis that these humans had a mainly hunting economy, and therefore a diet high in animal protein. We found this to be the case, and by comparing the human δ15N values with those of contemporary fauna, we conclude that the protein sources in human diets at these sites came mainly from herbivores such as Bos sp. and Cervus elaphus
We undertook stable isotope analysis of Upper Palaeolithic humans and fauna from the sites of Gough's Cave and Sun Hole Cave, Somerset, U.K., for palaeodietary reconstruction. We were testing the hypothesis that these humans had a mainly hunting economy, and therefore a diet high in animal protein. We found this to be the case, and by comparing the human δ15N values with those of contemporary fauna, we conclude that the protein sources in human diets at these sites came mainly from herbivores such as Bos sp. and Cervus elaphus. There are a large number ofEquus sp. faunal remains from this site, but this species was not a significant food resource in the diets of these Upper Palaeolithic humans.
If the humans hunted and consumed mainly horse, then their 15N values should be c. 3–5‰ (Equus 15N value of 0·7‰+enrichment of 2–4‰). Instead, their 15N values make more sense if they lived mostly off Bos and Cervus elaphus (Bos and Cervus values of c. 3‰+enrichment of 2–4‰=the observed values c. 6–7‰). It is also possible that other species, including Rangifer tarandus, were consumed by these individuals. Rangifer tarandus has 15N values similar to Cervus elaphus (Richards, 1998), and has more positive 13C values, which may explain the observed slight enrichment in the human 13C values. A number of artefacts made from Rangifer tarandus have been found at Gough’s, but there is no other evidence that this species was being exploited for food
