Welcome to My New Followers! For your benefit I thought I would share a tad about me. 13 years ago a disease ridden physician I went LCHF/Paleo. My MD world was rocked by the departure of disease & improvement in my health from NOTHING I learned in med school - just improving my diet. I felt like I was deceived & a fraud. I started researching and bio hacking. Only one species roams the earth riddled with disease while all the rest thrive....I wanted to know why. Its mostly bc wild animals eat what they should and dont what they shouldn’t. They also rarely exercise but move a lot & have intense physical encounters infrequently. I began using an MRI to track Biomarkers in the body (Visceral Fat, muscle, heart fat, arterial disease in the brain) diligently for 5 years. I learned a lot & share that with my clients & followers. I have also amassed a very large amount of skin based biomarkers which are all freely accessible to follow to assess how healthy they are & whether they are improving or worsening. You will learn about them following me. Using them, living optimally & recognizing your body is your MOST important/valuable physical asset you will ever have is a simple plan to optimize yourself & your life. I am a physician completely dedicated now to reversing disease not treating it. The biggest surprise I learned from
doing so was that human performance improves in everything. That you may not grasp this yet defines how much the conventional health system has failed you. What I ate / didn’t eat

Everyone comes at this differently; my interest was in the most nutrient-dense foods, ethically produced.

My version excluded almost all plant products, including nuts, all vegetables and fruit. I consumed some dairy and eggs. In terms of meat, I consumed fish and beef, some pork, and virtually no poultry.

My exception was coffee and the occasional distilled spirit, the latter which I didn’t consume very much of at all because of its effect on blood sugar.

Even though supplementation is controversial, I did consume a vitamin C supplement, with the exception of the periods when I was wearing a continuous glucose monitor (CGM), since vitamin C is known to artificially raise CGM readings. I also added bone broth.

Functionally, this wasn’t a big change from the well-formulated ketogenic diet I’ve been on. Essentially this was elimination of nuts and non-starchy vegetables and supplementation with meat.

Health Status / How I felt

I don’t have food intolerances (that I know of), so my purpose was to understand the diet and also see if it contributed to athletic performance. I was able to do what I wanted to without any limitations. There was probably an improvement in appetite management beyond what I’ve achieved with a well-formulated ketogenic diet. This can be an issue for people raised on an ultra-processed food Standard American Diet (SAD), which unfortunately is still the majority of Americans today.


The Data

I happened to have labs drawn prior to starting the month, and they confirm I am in the 12% of Americans in metabolic health. Additionally, I’ll admit here for the first time that my coronary artery calcium (CAC) score is zero (0). CAC is unlikely to progress in a person without diabetes and who does not smoke, as shown in the latest MESA paper (I’ll be posting on that soon), so there’s no need to recheck this study.

I posted my continuous blood glucose readings separately. They are quite boring, as they should be.

Dr. Ted Naiman says he has now had many patients who have done 30-, 60-, and 90-day trials of the carnivore diet, with generally good results and normal labs. However, he has been finding that longer term, the diet may be more concerning. “I have now had a small handful of patients who were doing this longer than six months who have reported vague fatigue. The lab workup in these people is usually normal except for very low folate levels, below the normal range.” (Folate, vitamin B9, is an essential vitamin for cellular processes. Most people think that moving to a low-carb, high-fat diet means they’ll have to eat meat, and lots of it, but that’s not the case, says Noakes, who gets “a little sensitive” at the notion. “I get attacked that I’m promoting a meat-only diet, but that’s not true — that’s a carnivore diet. I do think a carnivore diet has benefits for certain people who are allergic to plants. But for my diet, my fat comes from avocados, coconut oil and dairy produce, particularly cheese. It’s actually quite difficult to get meat that’s got fat on it these days (besides lamb and fatty fish) because they remove the fat from most meat products. But it’s still a great source of other nutrients that you need.”

I call it Keto-Carnivore. I have no issues recommending a carnivore diet. If a patient has an intolernce to plants, what is the point in telling them to eat it?

My autoimmune protocol which is essentially an elimination diet starts with meat only.


It has a been challenge. Everything from the financial aspect to the regulatory aspects are challenging.

But this is my passion, I want to help people come off medications safely, I want to help them come off their diabetes medications, blood pressure medication through diet and lifestyle change. The problems are that insurance wont reimburse that time, so I have resorted to charging a retainer. As a physician I struggle with this, it makes me feel horrible making the health of my patients a financial issue but this is the current insurance & regulatory environment we face.

I view myself like a mini-Virta. Currently I am doing regular patient follow up, weekly when patients first start. I track their weight, body composition, blood pressure, ketones, glucose COMPLETELY remotely using smart equipment that automatically transmit their data to me (so its no work for them). This has been wildly successful and I absolutely LOVE it. Much of the time I get to save my patients money when they stop their medications so that is double win for me!

This is my life mission, to help people get healthy, this is what I was born to do, and so I am grateful and happy to be able to do this. Hopefully in 5 years time, the practice will be busy and I'll have an educational video series out, along with setting up a annual low carb conference in the NYC area.

Vilhjalmur Stefansson

Eating Inuit-style became Stefansson’s obsession. American and European explorers typically carried their own supplies with them, including fruitcake and whiskey. According to biographer Tom Henighan, Stefansson was (famously) more interested in eating what the Inuit were eating, and mostly hunted his own meat. This had a dual appeal: He didn’t have to bring along heavy supplies, and, as time went on and he suffered few ill effects, Stefansson became convinced the Inuit were on to something. As a result, Henighan writes, “he took issue with the medical dogma” that the best diet was extremely varied and featured the maximum amount of raw vegetables. In fact, he called those ideas the “fetishes” of dietitians. After retiring from Arctic forays in 1918, he estimated he had spent a total of five years living entirely off meat and water.

Stefansson even found himself defending the thesis that vegetables weren’t necessary for a healthy diet. “Stefansson Braves the Wrath of Vegetarians” was just one headline published during a flurry of media attention in 1924. “The common supposition is that a meat diet would lead to rheumatism, gout, and premature old age,” commented the anonymous writer, who also opined that while the chilly rigors of a life in the Arctic might make an all-meat diet possible, it wouldn’t be appropriate for someone living in a temperate or tropical zone.

Why I've only Eaten Meat for 25 Years (Autoimmune Issues)

I'm going in for my annual this month so I will ask about getting the CAC.  I have been hesitant with most testing as I'm really not able to make many changes to my diet and while I'm sure it would be fine based on the testing I've gotten if it weren't I would be in a position of stressing about something I can't do much about.  This is something I've talked about in depth with my doctor but will do so again.  I'm not on any social media and only make the videos I do to help others not grow my channel which is why my topics are so varied and typically about things people wouldn't want to talk about or admit.


Yeah, I'm pretty good with it now, I think after seeing Shawn Baker on JRE I started to shift my own perspective.  But you have to remember, I'm a product of the 80s, the food pyramid, and information being hard to come by.  And any time I've talked with people in the real world and disclosed this it's been met with skepticism and questions I wasn't informed enough to answer at the time.  So it was easier to just move on with life and not think or talk about it with people.  That became more ingrained and continued until now and me aging enough to start thinking "hmmmm, maybe this has been a blessing in disguise".  It's nice to see the positivity surrounding this video though and nice to see that it's of help or interest to others.


I used to more than I do now as I really wasn't framing it right.  When you are worried about your health it's harder to embrace or find joy in.  This is a great question I should have addressed in the video.  I also find that there are ways, even with just a couple foods to keep from getting bored.  For example, a sous vide flat iron steak, Boston pork shoulder, and a hamburger all taste so different.  Then I will sometimes add left over pork roast to beef and make a burger which again is totally different.  Pork side slab, pork ribs, different cooking styles and the list goes on.  I have just stopped getting bored with it and come to really enjoy it.  I also have a Hobart A200 20qt mixer with a #12 grinding attachment, a chamber vacuum sealer and a large sous vide always going so I've perfected my craft so to speak.  I also love many aspects of the consistency in terms of knowing what to expect from my body.
